Vegan Vegetable stew (South Indian Kurma)


This dish is made with any veggies of your choice. I used carrots, peas and potatoes. But if you are trying to cut down carbs or follow a keto or low potassium diet, then eliminate the potatoes and substitute with Cauliflower. Other veggies to include are green peppers, red peppers, zucchini, green beans, cucumber and chayote squash. It is a tasty, creamy stew which can be eaten by itself or as a side dish with rice, quinoa, roti (Indian bread) or tortillas. Enjoy!

It was made in an instant pot but can be made stove top as well. Just cook the veggies in the water before adding the ground paste. Simmer some more time until well blended and serve.
