Summer tacos with air fried chickpeas and salad (medium Potassium for CKD)

Now that we are heading into summer and heat is increasing in our body, our mouth craves cool foods and beverages. However in spite of the hot weather, our digestion is not as good coming out of the spring season. Eating raw salad, although tempting may still be hard to digest and cause gas and bloating. This recipe is very light, cooling and satisfying for the hot summer days. This can be a good lunch or snack. The spices added makes it a little easier to digest.

Each taco has about 245 mg of Potassium, making it a medium potassium food which can be included in a CKD Diet as a snack or meal.



Recipe:

Ingredients:

  • 1 cucumber chopped

  • 1 tomato chopped

  • 1 red onion chopped

  • 1/2 cup of carrots sticks

  • 1/2 tsp salt

  • 1 tsp black Pepper powder

  • 3 tbsp of lime juice

  • 8 flour tortillas

  • 1 cup Air fried chickpeas

  • 1 tbsp coriander powder ( for the chickpeas)

  • 2 Greek yogurt beaten with water (Substitute with vegan yogurt if vegan)

  • 1 tbsp coriander chutney (store bought)

  • 4 tbsp Medium spice salsa


Directions:

Drain the chickpeas and mix in some olive oil, coriander powder and salt and air fry in an air fryer for about 15 mins. To assemble the Taco, add the veggies into warm tacos, add 1 tbsp of roasted chickpeas, 1 tbsp salsa and a drizzle of the yogurt sauce. Enjoy!
