Zucchini Stir Fry - South Indian Style

With summer around the corner the common seasonal veggies are zucchini, peppers, yellow squash and cucumbers which are all cooling in nature. Nature always gives us what we need to nourish our body. Zucchini is a watery vegetable and is considered to be sweet in taste with some astringent quality. It is cooling for the body in summer time and can be used in many recipes including salads. However, making a stir fry with spices gives it a zing and accentuates its flavor. Try this recipe with some spices to help with digestion.
