Low Carb, Low Potassium mashed potatoes with cauliflower


Patients with Chronic Kidney Disease are restricted in the kinds of fruits and vegetables they consume due to the high potassium content of some of them. Potatoes is very high in potassium and they miss eating mashed potatoes. Cauliflower offers a great substitute to make mashed potatoes with one third of potassium content as potatoes. Following is a recipe I found in Zipongo.com. Add spices to increase digestion and reduce bloating if that's an issue.
