Delicious Diabetic Pancakes


For those who want a light pancake which is delicious and healthy, try these buckwheat pancakes. Although sweet foods are generally heavy and difficult to digest, adding a spice blend improves digestion according to Ayurveda. There is no taboo of any food in Ayurveda if modified to suit the constitution of the person. Always listening to your body brings awareness to us about what we can tolerate and digest. This is mindful eating.

Delicious Diabetic Pancakes

Ingredients:

Buckwheat flour 4 cups roasted Quinoa flour 1 cup Baking powder 1 tbsp Flax 1/2 cup soaked in water Pinch of salt Lemon juice Ghee 1 tbsp (optional)

Spice mix Cinnamon 1tbsp Ginger 1 tsp Celery seeds 1/2 tsp Cloves 1/2 tsp Black pepper 1/4 tsp

Hemp milk or almond milk 1 cup Water as needed

Garnish Toasted walnuts 1 cup or as needed Honey for drizzling Cacao powder sprinkled

Cooking method: Roast the quinoa and grind into powder. Soak the ground flax seeds in water to soak for about 15 mins. Combine the buckwheat flour, quinoa flour, baking powder, the spice mix and the salt. Then add the Hemp milk, soaked flax, ghee, lemon juice and water as needed to make pancake batter. Pour onto a hot griddle and make the pancakes until they are slightly brown. For the garnish roast the chopped walnuts in a tsp is ghee. Add a tsp of honey to the walnuts and mix.

To serve place the pancake on the plate, sprinkle a little cacao powder, garnish with the walnuts and drizzle some honey and serve.

Variations: Oat flour can be substituted for quinoa or part of the buckwheat. Stevia can be used in the batter for sweetness if desired.
